My Dad's Favorite Food
In the midst of these trying times, I am writing to you with some recipes in the hopes that they will inspire you to continue cooking and help us all find joy to be shared with others. Whether it be by eating them with loved ones at home, making some for members of your community, or to enjoy a moment with friends or family on video calls — that is how I am connecting with my father these days. Which leads me to Father's Day! This Sunday is not only Día del Padre here in the US, but also in Mexico where my dad is. Because he is now recovering from a scary time in the hospital down there, I have made it Torta Week on my social media channels. Why Torta Week? Because it is not only my dad's favorite food, but he also boasts about making the very best ever tortas. So here are some favorites I'm hoping you will also love. 
Steak & Avocado Torta or Pepito

This is a big, overflowing torta built around grilled flank steak. It's great for grilling season and great for dads who love meat. And great for me, too, because I love it! So much so that I'm inviting all of you into my home kitchen via Facebook Live this Saturday, June 20, where I'll be sharing how I make these tortas, also known as pepitos. Maybe you will want to make them for dad or, hey, maybe dad wants to cook along too? Plan to join us at 4:00pm ET!

Ham & Cheese Tortas
My dad really does make some mind-blowingly good tortas, but possibly the best I ever had was in Michoacán a long time ago, made my the legendary Diana Kennedy. All these years later, I still remember the freshly baked bread, farm-style ham, homemade refried beans, and addicting pickled jalapeños. I am sharing my favorite way of building them with you.

Chicken and Plantain Torta
Chicken & Plantain Crazy Torta!
This one gets creative, bordering on sweet/savory with the combination of caramelized plantain slices and chicken marinated in vinegar and spices. Piled on a bolillo with layers of refried beans and creamy avocado, it is oh so satisfying. My husband really loves this one too.

Coming from Michaocano parents, I crave tortas like you just couldn’t imagine. But where can you get some good bolillos in the DC area?  - Gladys

A: Hola Gladys, So nice to meet a Michoacana here! I have found nice bolillos at Panam International market on 14th Street NW. If you're outside the city, or for all reading who are not in DC, I like the ones they have at Shoppers. Of course, it's hard to find bolillos that are as good and fresh as those in Michoacán. However, you can ask the stores at what time and which days they get them in or make them fresh. Also, you can give them a couple minutes in the toaster to crunch them up a bit!  - Pati
